I preferred one when I used panniers, for what it's worth.
Fewer things to carry off the bike, less fiddling around to load and unload, easier to strap random crap onto rack on the spur of the moment with only one pannier.
Fopr those who use panniers for a daily commute, do you prefer one fully packed bag or two less packed bags to carry stuff back and forth?

One. Before I used panniers, I imagined that I would be off-balance, but I've found surprisingly that even a 10 or 20 pound bag (i.e., quite heavy to carry in my hand) doesn't really unbalance me all that much. I mean, I can feel the pull if I'm looking for it, but it doesn't affect my steering. And most of the time I'm not even carrying that much stuff, and I prefer the convenience of only having one bag to carry. Makes me feel like less of a mule, I guess.
Definitely one, but I switch back and forth btw my large and small panniers. Large when I have more than just my computer on me.
I use two when commuting, because generally I have my laptop in a hard case (it's my employer's, and it has a HUGE screen, so it's big and I want to care for it).
If I'm not carrying the laptop, I stick with one.
I usually stick with one as well, unless I need to stop and grab some groceries on the way home or something. I was thiking of switching to two, but I think I would just end up filling them with extra stuff that I dont really need anyway.
Always two for me. I've used one before, didn't care for the unbalanced feel.
